Should stage 3 and 4 patients eat walnuts, almonds, or beets?

That would depend on your blood chemistries.  Diets should be suggested when there is a problem with your blood chemistries.  Your physician should suggest dietary changes in Stage 3 and 4 chronic kidney disease (CKD) based on your blood evaluation.  This may also need to be adjusted with the advice of a dietitian.  In most cases, I suggest dietary salt restriction for all patients with CKD and then adjust diets further based on regular blood testing.
